August '23 - Cucumber, tomato, and pepper salad
Ingredients:
1 large cucumber (thinly sliced with the skin on)
5-7 small/cherry tomatoes (quartered) then seasoned with flake salt and cracked pepper
1 yellow bell pepper (cut into thin 1/4” strips, then cut into 1/2” long pieces)
tabbouli (I used Trader Joes’s)
Bragg’s coconut aminos (this is liquid umami its slightly sweet and smoky and delicious)
“everything but the bagel” seasoning
smoked salmon (again I used Trader Joe’s)
No need for specific measurements:
Prepare all the produce as described above then add them all to a large mixing bowl.
Add to that the tabbouli (about 1/2 a tub)
Add the coconut aminos (a couple of TBS)
Add a few dashes of the everything bagel seasoning
Give everything a light toss, add some S&P to taste, then dish into serving bowls and top each with a good amount of the smoked salmon flaked into bite-size pieces.
