August '23 - Cucumber, tomato, and pepper salad

Ingredients:

  • 1 large cucumber (thinly sliced with the skin on)

  • 5-7 small/cherry tomatoes (quartered) then seasoned with flake salt and cracked pepper

  • 1 yellow bell pepper (cut into thin 1/4” strips, then cut into 1/2” long pieces)

  • tabbouli (I used Trader Joes’s)

  • Bragg’s coconut aminos (this is liquid umami its slightly sweet and smoky and delicious)

  • “everything but the bagel” seasoning

  • smoked salmon (again I used Trader Joe’s)

No need for specific measurements:

  • Prepare all the produce as described above then add them all to a large mixing bowl.

  • Add to that the tabbouli (about 1/2 a tub)

  • Add the coconut aminos (a couple of TBS)

  • Add a few dashes of the everything bagel seasoning

  • Give everything a light toss, add some S&P to taste, then dish into serving bowls and top each with a good amount of the smoked salmon flaked into bite-size pieces.
