September '23 - Roasted Carrots with Hot Honey

The below will make 4 servings

Ingredients

  • 6 carrots

  • 1/4 bunch of cilantro

  • Salt and pepper to taste

  • Cooking oil (I like the blend of avocado and extra virgin olive oil)

  • Hot Honey (I used Mike’s Extra Hot Honey, they also make a lower heat version for those more sensitive to heat)

Method:

  • Preheat the oven to 425

  • Cut the tops off the carrots and peel them

  • Halve them lengthwise then lay each half down flat and cut across into half moons. For those wanting to make them look a bit extra fancy, you can cut across at an angle.

  • In a medium bowl toss the cut carrots with a drizzle of your favorite cooking oil, roughly 1/2 tsp of salt and some black pepper. Don’t go too heavy on the pepper if you want to keep these mild because remember we will still add spicy honey at the end.

  • Spread the cut carrot segments out into a single layer on a lightly oiled & foil-lined baking sheet.

  • Roast them for about 16-20 mins until fork tender stirring halfway through.

  • Once cooked to your liking put the still hot roasted carrots in a bowl, drizzle your desired amount of hot honey over them to allow it to melt.

  • To finish sprinkle over fresh chopped cilantro for some freshness & maybe a bit of flakey salt if you’d like as seen in my above photo.

I served my roasted carrots as a side next to kimchi fried rice with an over medium egg & sautéed mushrooms. Let us know what you serve them with in the comments below
