September - Baked Green Bean Fries
Ingredients:
1 lb (roughly 35-40) fresh green beans
2 eggs
3/4 cup “breading”
*whatever salty & crunchy item you might have on hand like: ritz crackers, cheez its, potato chips, seasoned breadcrumb, panko, etc. A combination of any of those also works.
1/3 cup grated parmesan cheese
1 tsp garlic powder
1/4 tsp cayenne
For the Honey Mustard: Equal parts of:
Mayo
Dijon Mustard
Honey
Method:
Pre-heat your oven to 425F
Prepare a baking sheet(s) by lining it with either a silicone baking mat or parchment paper. Set it aside until its needed.
In your food processor pulse together your breading, parmesan, garlic powder, and cayenne pepper. Then move this mixture to a shallow bowl.
In a separate shallow bowl whisk your eggs
Clean and cut off both ends of your beans. Now you ready to dredge them.
The clean bean first gets coated with egg (shake off excess) then it goes into the bowl of breading to get fully coated by that (again shake off any excess). Then place that bean on your baking sheet. Repeat this process until all your beans have been dredged. They should be arranged on the cookie sheet so they are not touching.
Bake those for about 12-15 mins or until they are GBD (Golden, Brown, and Delicious).
While the fries are in the oven, you can mix your honey mustard dipping sauce. All you do is literally just stir together equal parts of mayo, dejon, and honey.
When the fries come out of the oven they should be crispy and enjoyed while hot.
