January '24 Crispy Cauliflower Bites
Ingredients: (serves 2 people)
1/2 head of cauliflower cut into bite-size pieces
5-6 TBS of your favorite sauce or dressing (I used a ginger-lime peanut sauce)
1/2 cup of panko breadcrumbs
1/4 cup of flour
salt and pepper
Method:
Preheat your oven to 425
Place the cleaned bite-size pieces of cauliflower in a large bowl. Season with salt and pepper. Add your sauce or dressing. Stir to coat.
Place the breadcrumbs and flour in a separate large bowl. Season that with 1/4 tsp of salt and a pinch of black pepper. Stir to combine.
Add the saucy cauliflower to the breadcrumb mixture and toss thoroughly to coat.
Lift the breaded cauliflower pieces out of the bowl (leaving any remaining breadcrumb mixture behind). Arrange in a single layer on a lightly oiled, foil-lined baking sheet. Be sure to leave space between the pieces so they bake evenly and crisp nicely.
Roast these for about 23-25 minutes until nicely browned and crispy.
**I served over some fluffy jasmine rice, roasted edamame, drizzled with a spicy aioli, and topped with a bit of crushed peanuts
